In the Kitchen: A Night Out

Now I know that you might think if I’m in the kitchen cooking that “A Night Out” is an odd name for this entry.  However, don’t despair because I have a good reason for doing that!!  So, let me explain!!

Since money is tight, we just don’t eat out as much as we used to.  Simple fact, I can cook at home way cheaper than feed 3 of us at a restaurant.  I wanted to create a meal of some of our favorite dishes when we go out and create a meal at home.  I think I did just that!!  The meal was….


Santa Fe Chicken (Chili’s ® Monterey Chicken), Southern Green Beans and Baked Mac-N-Cheese.  MMMM  Doesn’t it just look so tempting and delicious??

One of my favorite meals is Monterey Chicken from Chili’s.  I swore that I’d find a way to make it, and I did!!  The recipe is very easy as you’ll see below and I call it Santa Fe Chicken.  The Man loves Southern Green Beans anytime we go to a BBQ joint or someplace with southern cooking.  Kiddo absolutely loves Baked Mac-N-Cheese when we go out anyplace.  I don’t usually make it this way.  I do the typical cheese sauce on the stove and mix it all together. 

I don’t get credit for the Baked Mac-N-Cheese though.  I followed the recipe from Ree at Pioneer Woman.  You can find the recipe here.  Once I saw it, I knew it was the one I wanted.  I originally saw it on my birthday at Dawn’s Diversions and went in search of it.  Now on to the rest of the dinner….

Santa Fe Chicken (based on a dish at Chili’s called Monterey Chicken and they own the rights to that name)

3 boneless skinless chicken breasts      mustard      2 Tablespoons olive oil   

1/2 cup smoked bbq sauce      6 strips of bacon, cooked until crispy     

1 cup shredded cheddar cheese      2-3 teaspoon lemon pepper

Preheat grill to about 350°.  After cleaning the chicken, place in a medium bowl.  Add about 2 Tablespoons of olive oil and using your hands, coat the chicken.  Add 2 good squirts of mustard and rub to coat again.  Next, add the lemon pepper and rub to coat one last time.  Place chicken on grill chicken breasts on the first side for 10-15 minutes (depending on size of chicken breasts).  Flip chicken and top each with bbq sauce and grill the 2nd side for 10-15 more minutes.  At the end of that time, place 2 strips of bacon on each chicken breast and 1/3 of the shredded cheddar cheese.  Cover and grill until cheese melts.  (I put mine under the broiler for 5 minutes.)  Remove from grill and serve.

Hubby said that I nailed the recipe.  He sat there through the whole meal saying that it was just as good if not better than the restaraunt.  The next side, he was really thrilled with. 

Southern Green Beans

1 large can cut green beans, drain 1/2 liquid      6 large pearl onions, quartered

3 strips of bacon, cooked crispy and chopped up      1 Tablespoon butter

Salt and Pepper to taste

Place the butter in the bottom of large saucepan, add onions and let cook until onions are still firm, but turning almost translucent.  Add cut green beans, chopped bacon and season to taste.  Cook over medium-low heat until heated through.  Serve.
