What has become our Wednesday night traditions, we had dinner cooked in the crockpot tonight. I don’t know if I’ve ever stated why we do this on Wednesday’s. Anyway, it’s because it’s the night that I teach my religion class. We always used to go out, but tightening up our spending and enjoying home cooked meals together has replaced that.
So, what was on tonight’s menu?? It was beef fajitas and just look at them….
To say they were delicious is putting it mildly!! We could smell these things cooking all day and at times, it made it hard to focus on our studies!! Interested in the recipe?? HHMMMM Maybe I won’t share this one!! HAHA Let me just tell you, it’s the most simple recipe you can find. With that said, here’s my recipe for Beef Fajitas in the crockpot….
1 pound beef flank steak (we used brisket) 1 medium onion, cut in strips
1/2 cup salsa 2-4 Tablespoons lime juice cilantro, chopped (approx. 2 Tablesppoons)
2 cloves garlic, minced 1 small green and red bell pepper, cut in strips
1 Tablespoon chili powder (more if desired) 2-3 teaspoons cumin salt to taste
flour tortillas, warmed when ready to use
Cut your flank steak or brisket lengthwise in half into thin strips. (We did this the night before and let it sit in a covered dish in the refrigerator with the seasonings on it.) Combine salsa, onion, peppers*, lime juice, garlic, chili powder, cumin, salt and cilantro in crockpot. Add the meat and mix well. Cook on low for 5-6 hours.
Serve with flour tortillas and additional salsa, sour cream, shredded cheese and whatever else you like.
*If you prefer your peppers firmer with a little crunch, add to crockpot 1 hour before you’re ready to serve.
