It’s Wednesday and back to religion class after Spring Break. To put it mildly, Wednesday’s are very busy in our house. Normally, we eat out either before or after class. We do it mainly because that’s what time allows. However, I was ready for change and we all need something more healthy. Not to mention, it’s cheaper to eat at home than out!!
I think I mentioned in an earlier post that I got an awesome crockpot recipe cookbook. However, I never follow a recipe!! For me, the book is just about ideas. Last night while deciding what to make in the crockpot to have today, I found a recipe for Chicken Cacciatore sounded absolutely delicious to me and that was my decision for today’s meal.
The only thing I can tell you is that it was delicious!! The chicken was so flavorful and tender. The sauce had just the right amount of flavor. I’m hungry again just thinking about it!! The recipe called for serving it with spaghetti, but we decided to use rice instead. It was the perfect choice!! Here’s my recipe for Chicken Cacciatore….
4 chicken breasts (boneless, skinless) 1 can diced tomatoes 2 teaspoons Italian seasoning
1/4 large onion, diced 1/2 to whole green or red pepper, diced
1 small can mushroom pieces 1/2 can chicken broth 1 teaspoon garlic powder
salt and pepper to taste 6 – 10 splashes lemon or lime juice
Put chicken in crockpot with all the seasoning, diced onions and peppers. Add 1/2 can of chicken broth and all of the diced tomatoes with juice. Drain the mushrooms and add. Splash in lemon or lime juice. Cook on high for 4 hours or low for 6-8 hours. Serve over cooked pasta or rice.
If you want it with more juice, use all of the chicken broth. If you want a thicker sauce, mix 2 tablespoons corn starch with 2 tablespoons of water. Remove chicken pieces and mix in corn starch mixture until it thickens.
